Trust me. This is dreamy. It's a triple berry and fig summer pie and the recipe has luscious, fresh figs, healthy coconut, nuts and some beautiful vanilla. You can mix up the fruits according to your taste, and try to make sure you leave in the freezer for at least four hours. This way, the filling is given time to fully set. Hope you enjoy, BB xxx
For the base:
2 cups macadamias
8-10 pitted and sliced dates
1/2 teaspoon vanilla powder
1/2 cup maple syrup
For the berry layer:
2 cups macadamias, soaked for at least four hours
1 cup strawberries or raspberries
1/3 cup maple syrup
1/3 cup cacao butter, melted
1 banana, ripe
The Bondi Baker Method
Step 1- Place all of the base ingredients in a food processor. Process until crumbly but sticky.
Press the crumble into the base of a well greased pie pan. Place in the freezer to set.
Step 2- Next, process the ingredients from your berry layer until creamy. Smooth this evenly onto the base. Place in freezer to set for at least four hours.
Step 3- When ready to serve, remove the cake from the freezer and carefully take it out of the pan, allowing it to thaw for approximately 10-20 minutes. Then, top with all of your favourite spring and summer fruits!
