Deluxe Nourish Bowl
I LOVE this meal. It combines a rainbow of colours and textures, and it is deliciously tasty without being heavy or too filling. You can eat it for lunch or dinner, and it's also a great base for leftovers. Add and subtract ingedients according to your taste and what is in the fridge. Lots of love, BB xxx
1 bunch mixed salad leaves
1/2 avocado, sliced
1/2 lemon, juiced
1 capsicum (and generous dollop of olive oil)
Handful of cherry tomatoes, sliced
Organic pesto or hummus dip ( I bought mine but you can make your own!)
1 cup cooked brown rice
1 tablespoon olive oil
2 teaspoon tamari sauce
Sprinkle of sultanas
Organic corn chips or great on the side
Step 1- For the brown rice, cook according to package directions and stir in a tablespoon of olive oil and tamari sauce. Season to taste, sprinkle with sultanas and set aside.
Step 2- Slice the capsicum and place on a baking try in a preheated oven. I heat it at about 250 degrees. Drizzle with a generous dollop of olive oil and bake for 20 minutes until the skin begins to bubble. Place aside to cool for about 10 minutes. Then peel the skin off and slice thinly. Season to taste. Alternatively, you can include this in it's raw form.
Step 3- Smash the avocado and assemble the ingredients around the edges of your bowl. Place the mixed green leaves in one area and drizzle with the lemon. Add the sliced capsicum to the brown rice and place in the bowl. Then add the avocado and remaining vegetables.
Step 4- Drizzle lightly with some olive oil if you wish and tweak with a drizzle of lemon juice. Accompany with some organic corn chips, crackers or gluten-free bread, and and then.... simply kick back and enjoy!!!
