Supreme Vegetable Salad
Now I know that is not the most sophisticated of adjectives, but this is REALLY delicious.
Full of healthy greens, this supreme vegetable salad includes avocado, cucumber, zucchini noodles and mixed leaves. For some extra flavour and nutrients, I also tossed in some sweet raw capsicum, ripe cherry tomatoes, spanish onions and some scrummy couscous.
All you need to do is get out your chopping board, slice up the vegetables listed above, and mix in some filler, such as couscous or rice. You will find plenty of recipes for the rice or couscous by searching the recipe index at the top of this blog.
Serve on it's own or with your favourite crusty bread, drizzled in lashings of olive oil.
