Healthy Vegetable Salad With Hummus
So this is everything......!
Well. Maybe not EVERYTHING, but it certainly is one of my favourite healthy meals to pull together when I need a quick, nourishing meal.
You can get creative and mix up the ingredients, but I used slice cherry tomatoes, half an avocado, zoodles (zucchini noodles) sun-dried tomatoes, a handful of almonds, and some green mixed leaves.
Then, simply drizzle some lemon juice and olive oil on top of the salad, sprinkle with some salt and pepper, and serve with a large dollop of hummus on the side. You can eat the salad on it's own or eat with some warm, crusty bread.
I actually ended up doing just that, drizzling oodles of olive oil on the bread, before spreading with some of the hummus, and topping with a bit of the salad. So..... a healthy, nourishing sandwich and salad combo!
