Easy Peasy Salad In a Jar
One of my favourite Sunday rituals is to spend the afternoon prepping my meals for the week. As a creature of habit, I love the process! I will sleep in, go to the gym, pop to the supermarket and health food store to stock up on ingredients, and then make my way back to my little kitchen to start prepping and cooking.
Like most of us, I live on a budget. Most of money tends to go on rent that allows me to live by the ocean in Bondi! It's a choice I make, as feeling close to water has such as positive impact on my wellness and state of mind. So, when it comes to things like shopping for nutritious food, I have learnt (the hard way), that most ingredients can be bought cheaply at the supermarket. I buy the absolute necessities at the health food store, and the rest is bought in bulk at the lowest pricepoint.
This lunch is super easy, and you can make the couscous or rice in advance. Then , just fill the jar with fresh veggies and fruit on the day of consumption.
If you scroll down or search the recipe index, you will find a heap of simple recipes for rice and couscous. Use that as a guide for this part of the salad. For the rest, just chop up a rainbow of healthy veggies to stack in the jar,and you will be all set for your lunch at work or on-the-go.
