Obsession is Avocados. Not only do they taste divine, but they are absolutely packed with healthy nutrients to keep you energised. Avocados contribute nearly 20 vitamins, minerals and phytonutrients, including 4% of the recommended Daily Value for vitamin E, 4% vitamin C, 6% folate, 8% fiber, 2% iron, 4% potassium, with 81 micrograms of lutein and 19 micrograms of beta-carotene. They are also fantastically versatile as a food, and can be used on sandwiches, crackers, in salads and as part of a luscious vegan dessert. For the picture, I simply used two fresh avocados on some gluten free bread, and mix and matched some of my favourite toppings.
