Classic Kale, Avocado & Tomato Salad
What I love about this super-fresh salad is that it's full of flavour, and you can make it in five minutes. Drizzle some tangy, lemon dressing over the crisp, green kale, or simply eat on its own so your meal is super clean. Accompany with some fresh gluten-free bread or whole grain rice as a side if you're looking for some extra goodness. BB xxx
1 bunch kale, chopped roughly
1 punnet cherry tomatoes, sliced
1 avocado, sliced
1/2 cup walnuts, chopped
3 tablespoon olive oil
Juice of 1/2 lemon
1 clove crushed garlic
The Bondi Baker Method
Step 1- Simply slice and chop the vegetables according to your taste, and assemble your salad. Sprinkle the walnuts on top.
Step 2- Then, whisk the dressing ingredients in a bowl, and drizzle over the salad. Season with salt and pepper according to your taste.
