Vegan Chocolate Mousse
This decadent and creamy favourite is given a healthy twist by using the humble sweet potato. Trust me, this is truly delicious and a wholesome way to enjoy a delicious after dinner dessert. Hope you enjoy, BB xxx
2 chopped medium sweet potatoes
1/2 cup Medjool dates
1/4 cup coconut milk
3 tablespoon almond butter
4 tablespoons cacao
Sprinkles of coconut or almonds
The Bondi Baker Method
Step 1- Roast the sweet potatoes on baking paper until they are tender.
Step 2- Then, place in the food processor with the remaining ingredients and process until deliciously creamy.
Step 3- Finally, sprinkle with some raspberries, almonds or coconut. Easy....and yum!
