Triple Layer Chocolate Toffee Slice
This makes me happy! It's a twist on the traditional raw vegan healthy treat as it uses macadamia oil instead of coconut oil, and almond butter instead of peanut butter. The bananas add a smooth creaminess, and make sure you allow to full set in the freezer by leaving overnight. Hope you enjoy, BB xxxx
1 cup walnuts
1 cup almonds
¼ cup rice malt syrup
10 Medjool dates
½ tablespooon cacao powder
Pinch of salt
2 cups almond butter
4 ripe bananas
1 teaspoon vanilla powder
3 tablespoon macadamia oil
2 tablespoon cacao
1 tablespoon extra macadamia oil
The Bondi Baker Method:
Step 1- Line a loaf tin with baking paper.
Step 2- Place walnuts and almonds in the food processor and process until nuts have broken down into small pieces. This can take up to five minutes.
Step 3- Add dates, syrup, salt and cacao powder and process. The mixture should begin to stick together. Press base mixture into prepared loaf tin and spread evenly. Place in the freezer.
Step 4- Blitz banana, almond butter, vanilla and 2 tablespoons of macadamia oil in the processor until mixture is completely smooth. Remove the tin from freezer, and divide the filling in half, and pour one half over the base. Place the tin back in the freezer.
Step 5- Add cacao powder and extra 1 tablespoon macadamia oil to the remaining filling and process.
Step 6- Remove the tin from the freezer and spread remaining filling evenly to complete the three layer slice. Set in the freezer for at least 8 hours. Remove cake from the tin, and cut into slices. Place pieces on their side on a sheet of baking paper before eating. To die for!
