Easy Kale & Quinoa Salad
Every now and then, I need me some vegetables! This kale and quinoa salad is super yum and healthy, and the best bit? It's super easy to make. Enjoy with some warm and beautiful fresh gluten free bread. BB xxx
For the dressing:
1 ½ lemons, juiced
¼ cup + 2 tablespoons extra virgin olive oil
1 tablespoon pure maple syrup
2 teaspoons salt
freshly ground black pepper
For the salad:
2 bunches curly kale, destemmed and finely chopped
1 ½ cups cooked quinoa
½ cup golden raisins or sultanas
½ cup roasted almonds, chopped
1 large bell pepper, chopped
1 large carrot, grated
1/2 cup peas (optional)
The Bondi Baker Method
Step 1- Whisk together dressing ingredients and set aside.
Step 2- Place chopped kale in a large bowl. Pour dressing on top and massage dressing into leaves for a couple of minutes (using your hands) until kale is broken down.
Step 3- Add cooked quinoa, raisins, almonds, carrots and peppers. Toss to combine.
