Yum Vegan Oreos
This is THE way to treat yourself to one of the most awesome cookies of all time! You will find a raw recipe and baked recipe below to suit your taste, and the best part is they are super fun to make! The taste combination of chocolate and coconut is completely sublime, and you can eat as many of these dairy-free, sugar-free and gluten-free treats as you like. BB xxx
3 cups coconut
1 cup medjool dates
2 tablespoons cacao powder
1 teaspoon vanilla powder
3 tablespoon cacao butter
3 tablespoons rice malt or maple syrup
3 tablespoons peanut butter
1 cup of cashews, soaked for at least 4 hours
1/4 cup coconut cream
1/2 cup vegan choc chips
1/4 cup maple or rice malt syrup
1/2 cup cacao butter
The Bondi Baker Method
Step 1- Blend the cookie ingredients until sticky. Roll out on a board with a rolling pin and cut into circle shapes and refrigerate until firm.
Step 2-For the filling, blend all the ingredients until smooth and creamy and then spread between two cookies and sandwich together. Store cookies in the fridge until ready to eat!
1 1/2 cups all purpose flour or gluten free flour (note that gluten free flour will change the texture)
1 teaspoon baking powder
1/2 teaspoon sea salt
1/2 cup cacao
1/2 cup coconut oil, melted and then cooled
1/2 cup organic sugar
1/2 cup brown organic sugar
1 1/2 teaspoon vanilla extract
1/3 cup almond milk
1 cup vegan chocolate chips
The Bondi Baker Method
Step 1- Preheat the oven to 160 degrees.
Step 2- Then, in a bowl, whisk together the flour, salt, baking powder and cacao, and set aside.
Step 3- Then, in the bowl of a mixer, combine the sugars and coconut oil. Beat until well combined and add the vanilla. Beat again until smooth.
Step 4- Add the flour mixture in two batches, alternatively with the milk. The mixture should be on low. Then stir in the choc chips.
Step 5- Finally, using a spoon, form the dough into cookies and place about two inches apart. Lightly press down with the palm of your hand and cook for about ten minutes. Then transfer cookies to a wire rack to cool completely
Step 6- Then follow Step 2 in the raw recipe for the oreo filling, and place in the fridge for an hour. Then press the mixture onto the cooled cookies (I use my hands but you can use a spoon), and top with another cookie. Delish!
