Healthy Rice & Vegetable Salad
Who said healthy has to be boring?! This is a super nutritious salad that's easy to make and full of delicious vegetables and dressed yummy olive oil. Serve with some fresh gluten free bread if you feel like making this a full meal. BB xxx
1 cup rice, boiled
2 shallots, slices
2 capsicum, sliced
1 clove garlic, crushed
1 cup kale or spinach
Salt & Pepper
The Bondi Baker Method
Step 1- For the rice, simply boil until tender, and then drain well before setting aside. I let mine cool for about fifteen minutes so the vegetables added later on were crunchy.
Step 2- Then drizzle some olive oil in a pan, sautee the garlic and then add the capsicum and stir until tender. Remove from the pan and mix into the rice.
Step 3- Next, add the shallots and kale or spinach and mix well but gently.
Step 2- Adjust seasoning and texture to your taste. Eat with some gluten free bread or rice cakes if you like.
