Double Decker Chocolate Brownie Sandwich
This is epic. It's a double decker chocolate brownie sandwich made with two melt-in-your-mouth chocolate layers, and filled with a caramel peanut butter fudge filling. Try to treat the brownies with tender loving care, especially during the baking process and don't remove from the pan too quickly or they will crumble. You can serve on their own in all their glory, or with with some fresh fruit. BB xxx
1 1/2 tablespoons ground flax + 3 tablespoons water, whisked
3/4 cup + 2 tablespoons brown rice flour
1 1/2 cups almond meal
2 tablespoons arrowroot powder
1/2 cup cacao
1/4 teaspoon baking soda
1/4 cup + 2 tablespoon vegan butter
1 cup organic sugar
1/2 cup + 1/4 cup vegan chocolate, divided
1/4 cup almond milk
1 teaspoon vanilla
1/2 cup finely chopped walnuts
1/2 cup peanut butter
2 tablespoons maple syrup
1/2 cup dates
The Bondi Baker Method
Step 1- Preheat oven to 150 degrees and line a 9 inch square pan with parchment and grease all sides. In a small bowl, whisk together the ground flax and water and set aside.
Step 2- Then, in a large bowl, whisk together the dry ingredients (the flours, arrowroot, cacao, baking soda) and set aside.
Step 3- In a saucepan, add chocolate and vegan butter and stir on low heat until melted. Then add in the flax egg, sugar, vanilla, and milk and whisk.
Step 4- Pour wet mixture over dry mixture and stir really really well. The mixture will be very dry, but don't worry and keep mixing!
Step 5- Scoop the thick batter into your prepared pan and place a piece of parchment on top. Spread with hands or a pastry roller until smooth and even.
Step 6- Bake for about 35 minutes and allow brownies to cool in pan for about 1 and a half hours. Do not remove brownies until they are completely cool or they will crumble. After an hour or so, separate the edge of the brownie from the pan with a butter knife and place on a cooling rack. I like to leave the brownies out overnight and cut them in the morning and then fill with the caramel!
Step 7- For the caramel, just process the peanut butter, dates and maple syrup for a couple of minutes before placing between the two brownies.
