1 cup gluten-free rolled oats
1 cup rice crisp cereal
⅓ cup shredded coconut
½ teaspoon ground cinnamon
1 cups Medjool dates, processed or finely chopped
3 tablespoons coconut oil
1/2 cup peanut or almond butter
1/2 cup maple syrup (you can use less)
⅓ cup coconut oil, melted
3 tablespoons raw cacao powder
8-10 Medjool dates
The Bondi Baker Method
Step 1- Line a small deep square tin with baking paper.
Step 2- In a large bowl combine all of the dry ingredients and stir to combine. Then carefully mix in the wet ingredients and the processed or finely chopped dates- I use my hands to make sure the mixture sticks together. Transfer the mixture to the prepared baking pan and press down firmly with your hands to even it out. Place the pan in the freezer while you prepare the chocolate coating. This will also help the bars to set quicker.Let the chocolate mixture cool for just a minute, then remove the bars from the freezer and pour on top of the bars.
Step 3- For the chocolate coating process all the ingredients and then pour on top of the slice when it is cool.
Step 4- Return the bars to the freezer for about 10 minutes to let the chocolate set, then you're done. You can start chopping them into squares once the chocolate sets.
