California Vibes Coconut Citrus Cake
Oh yes. This is giving me some serious California Vibes. It's a healthy, wholesome, dairy-free, gluten-free lovefest, and you can fill with the lush coconut frosting I have included in the recipe below. 1 cup ground almonds
2 cups gluten free fine flour (or Indian chapatti flour or fine wholemeal flour if you can eat gluten)
1½ teaspoon baking powder
½ teaspoon bicarbonate of soda (baking soda)
½ cup coconut oil
¾ cup almond milk
¼ cup freshly squeezed orange juice (1 orange should be sufficient)
2/3 cup maple syrup (or agave syrup)
1 teaspoon pure vanilla extract
½ teaspoon almond extract
finely grated orange rind from 1 orange
4 tablepoons flaked almonds (to sprinkle on top)
Vegan Yogurt Coconut Cream Frosting
1/4 cup non dairy yogurt or vegan cream cheese
1/3 cup coconut cream (the thick cream that settles on the top of the can after refrigerating for a few hours) or cashew cream
1 tablespoon coconut oil, softened
Steviasweet to taste
1/2 teaspoon vanilla extract
1 teaspoon or more lemon juice
1/2 teaspoon cider vinegar
The Bondi Baker Method
Step 1- Preheat the oven to 150 degrees and grease a 9 inch cake tin and line the bottom with paper or grease with coconut oil.
Step 2- Sift the flour into a large bowl. Add the ground almonds, baking powder and baking soda and mix well.
Step 3- In a separate bowl, whisk together the oil, milk, syrup, orange juice, vanilla extract, almond extract, and the orange rind. Pour half of the wet ingredients into the dry ingredient bowl, and stir until combined. Add the remaining wet ingredients, and stir until the batter is smooth (but do not over stir). Pour the batter into the prepared tin and sprinkle the flaked almonds on top.
Step 4- Bake the cake for 40 to 45 minutes, or until a skewer inserted into the cake comes out clean. Let the cake cool in its tin for about 30 minutes, then transfer to a wire rack. Leave the cake to cool completely before topping or filling with frosting (which is optional).
Step 5- Combine all ingredients for the frosting in a bowl and sweeten according to your taste (I wouldn't use more than a tiny pinch of stevia as it is quite strong). Then spread lavishly between the two layers or on top.
