Easy Peasy Lemon Balls
This is an easy peasy, totally healthy snack full of yummy, tangy lemons, coconut and dates! One thing I've been noticing about making raw treats is that the consistency has to be right for your own personal taste. So, use the coconut cream and dates to bind together the ingredients, and if you want something a little bit sweeter, just add a couple more tablespoons of maple or rice malt syrup. BB xxxx
1 juice and zest of lemon, you can use two for extra tang!
5 - 8 medjool dates
1 tablespoon maple syrup (or rice malt syrup)
1/2 cup macadamias, cashews or almonds
2 cups desiccated coconut
2- 4 tablespoons coconut cream
The Bondi Baker Method
Step 1- Place all ingredients into your food processor and blend at a high speed until the mixture is smooth and easily sticking together. This will take about five minutes. If the mixture is too dry add some more coconut cream or dates, and if you feel it is too runny and some more nuts or coconut.
Step 2- Use your hands to shape the mixture into balls, roll in some extra coconut and place in the fridge until firm and ready to eat!
