Summer Vibes Raspberry Slice
This completely awesome and refreshing raw vegan slice is full of luscious raspberries and coconut and full of happy sumemr vibes! You can use the coconut cream to help with the consistency and add a bit more coconut if you want a thicker texture. BB xxxx
1 cup almonds
1/3 cup cacao
1/3 cup desiccated coconut
3 tablespoons coconut cream
10 Medjool dates
2 cups fresh or frozen raspberries
1 cup raw cashews, soaked overnight
1/2 cup desiccated coconut
1/2 cup pure maple syrup
The Bondi Baker Method
Step 1- Process all ingredients for the base until smooth and the mixture sticks together. Then pat down in a well greased tin (I use coconut oil) and freeze for an hour.
Step 2- For the raspberry layer, process all ingredients until smooth and creamy. I usually blend the cashews first for a few minutes and then add the remaining ingredients. If the mixture is too runny just add some more coconut and if it needs a bit more stickiness, just add some extra coconut cream. Finally, pat down on top of the bottom layer and freeze for at least another hour.
