Easy Peasy Strawberry Balls
Who doesn't love strawberries?! This is an easy peasy, totally healthy snack full of yummy strawberries, coconut and dates! Adjust the coconut cream to suit your taste, and if you want something a little bit sweeter, just add a couple more tablespoons of maple syrup. BB xxxx
1 cup strawberries
10 medjool dates
1 tablespoon maple syrup
1/2 cup macadamias, cashews or almonds
2 cups desiccated coconut
2- 4 tablespoons coconut cream
The Bondi Baker Method
Step 1- Place all ingredients into your food processor and blend at a high speed until the mixture is smooth and easily sticking together. If the mixture is too dry add some more coconut cream and if you feel it is too runny and some more nuts or coconut.
Step 2- Use your hands to shape the mixture into balls, roll in some extra coconut and place in the fridge until firm and ready to eat!
