Avocado Superfood Salad
Nothing says heaven more than this lush, avocado filled salad, topped with the freshest of cherry tomatoes. You can add some extra fibre with quinoa or some butter beans, and add some extra veggies if you like. I used a rainbow salad as a nutritious side dish. Hope you enjoy, BB xxx
1/4 cup quinoa, rinsed
1/2 cup water
2 smashed avocado
2 tablespoon olive oil
3 cloves crushed garlic
1 tablespoon lemon juice
Step 1- Simmer quinoa in a pan with water and bring to a boil. Cover with lid and then simmer for 5 minutes or until just cooked. Put aside. Alternatively, you can replace this with some beans.
Step 2- Finely chop garlic and the onion and toss gently in a bowl. Add the olive oil, lemon juice, quinoa (or beans) and salt and pepper. Mix well.
Step 3- Slice the tomatoes, smash the avocado, and assemble your salad (with the quinoa or beans) on a plate or in a tall jar.
Step 4- You can season with some extra lemon, garlic and salt to suit your taste.
