Ultimate Nourish Bowl
This big beautiful bowl of deliciousness is one of my favourite go-to meals, and I both love making it and eating it!!! Eat on it's own or with your favourite warm gluten-free bread, and for a raw food based diet, you can omit the quinoa, and replace with some zoodles. BB xxx
1 cup quinoa, lentils or brown rice
1 1/2 cups water
Mixed vegetables (I used carrot, sweet potato, zucchini, broccoli & capsicum)
2 cloves crushed garlic
Salt & pepper
The Bondi Baker Method
Step 1- Preheat your oven to 170 degrees. Then place the quinoa (or rice) and water in a saucepan and bring to a boil. Cover with a lid and simmer for 10 minutes, or until cooked. Set aside.
Step 2- For the vegetables, you can eat raw or roast on some baking paper for 30 minutes, on their own or with a tablespoon of olive oil. Once tender set aside, and toss with garlic.
Step 3- Slice your avocado and set aside.
Step 4- Now your ready to assemble your bowl! Place ingredients in sections around a plate or bowl, add the tomatoes, and once ready, season with salt and pepper.
