Fresh Fruit & Coconut Rawnola Cups
This weather has me waking up feeling super happy and grateful, and this morning I took some time to sit in the sun, do some exercise, and enjoy a couple of these fruit cups with coconut rawnola. I also included some delicious macadamia nut mixture which I made with some dates and maple syrup. You can leave this out if you like or replace with some luscious coconut yoghurt. BB xxx.
1 fresh mango
3 tablespoons raspberry chia (see recipe index)
1 cup strawberries and raspberries
3 tablespoons almond butter
1 bunch of red seedless grapes
Macadamia mixture (just pulse 1/2 cup macadamias, 5 dates and 1 tablespoon maple syrup until sticky) Coconut Rawnola (you can find this at your local health food store)
The Bondi Baker Method:
Step 1- Chop all the fruit so it is nice and chunky, and place your raspberry chia and rawnola to the side.
Step 2- Then layer the fruit, chia, rawnola and nut mixture in a tall glass or bowl so it is all full and messy. Then.....eat and enjoy!!!!
