Healthy Vegan Supersnack
Healthy dairyfree and sugarfree snack that's perfect for breakfast, lunch or dinner! It's vegan , easy peasy to make and blow-your-mind healthy!!!! All you need is your favourite gluten free bread, a creamy, tasty olive oil and some fresh avocado and tomato.

3 slices hearty, gluten free bread
Lashings of olive oil
3 small heirloom tomatoes, thinly sliced
1 ripe avocado
¼ cup fresh basil, chopped
The Bondi Baker Method
Step 1- Pour generous lashings of olive oil on each slice of gluten free bread and then grill in a pan. Alternatively you can dip in the vegan egg mixture included below.
Step 2- Evenly divide the avocado between the pieces of toast and layer the sliced tomatoes on top, sprinkle with fresh basil, and add any of your other favourite toppings such as homemade powermix. Serve immediately!
Vegan French Toast Alternative Option
1 ripe banana
1 1/4 cups unsweetened almond milk
1/2 tablespoon flaxseed
1/4 teaspoon cinnamon
4-5 slices hearty gluten free bread
Vegan butter or coconut oil
Step 1- Mash banana in a large shallow bowl. Add almond milk, flaxseed, cinnamon and stir. If your batter appears a bit goopy, add more almond milk to thin it out as it should be pourable. Then, let the batter rest for 5 minutes while you preheat your pan to a medium heat.
Step 2- Once your surface is hot, coat generously with vegan butter or coconut oil. Dip your slices of bread into the batter and let it rest for 5-10 seconds on each side, using your fingers to make sure it's fully submerged. Transfer immediately to griddle. An optional step is to sprinkle the freshly-dipped sides with a little almond meal for added texture.
Step 3- Cook for 3-4 minutes on each side or until evenly golden brown. Flip carefully using a sturdy spatula as the banana mixture can be a bit sticky if you're not gentle.
