Luscious Vegan Cherry Ripe Slice
Lush and healthy raw vegan cherry ripe slice that's free of sugar, dairy and wheat! It's easy peasy to make, and tastes like melt-in-your-mouth heaven. Remember to add some extra coconut to the filling if the cherries make it a bit runny as this will add bulk and texture. This is one of the tricks I have found with making raw treats- add things bit by bit as the texture needs to be not too runny or dry! BB xxxx
10 Medjool dates
1 cup almonds
1 1/2 cups shredded coconut
2 tablespoon organic rice malt syrup
2 tablespoon raw cacao powder
2 cups cherries with pips removed
Juice of 1 small lemon
1 tablespoon coconut water
3 cups shredded coconut (or more)
1 tablespoon rice malt syrup
1 cup raw cashews (soaked and rinsed for at least two hours) or 1 cup almonds
1/2 cup raw cacao powder
1/3 cup coconut oil or cacao butter
1/4 cup organic rice malt syrup or honey for a sweeter taste
The Bondi Baker Method
Step 1- Combine all base ingredients into food processor & blend well. Press the mixture into a tin greased with coconut oil or lined with baking paper. Place into freezer while you make your filling!
Step 2- For the filling place all ingredients into a food processor until everything is combined & it forms a dough. If it's a bit runny, add some more coconut. Place this mixture on top of base and press down flat. Place back into freezer for at least 1/2 an hour before you make your chocolate topping.
Step 3- For the chocolate topping place all ingredients into a bowl and whisk together until you have a smooth runny consistency. Then pour evenly over filling while still in the cake tin. Place in the freezer for 1 hour.
