Deluxe Vegan French Toast
This melt-in-your-mouth vegan french toast is gluten free, dairy free, sugar free, and completely delicious! Easy peasy to make, you can enjoy with some fresh fruit, coconut yoghurt or maple syrup at anytime of the day! BB xxx
1 ripe banana
1 cup strawberries
1 1/4 cups unsweetened almond milk
1/2 tablespoon flaxseed
1/4 teaspoon cinnamon
4-5 slices hearty gluten free bread
Vegan butter or coconut oil
The Bondi Baker Method
Step 1- Mash banana in a large shallow bowl. Add almond milk, flaxseed, cinnamon and stir. If your batter appears a bit goopy, add more almond milk to thin it out as it should be pourable.Then, let the batter rest for 5 minutes while you preheat your pan to a medium heat.
Step 2- Once your surface is hot, coat generously with vegan butter or coconut oil. Dip your slices of bread into the batter and let it rest for 5-10 seconds on each side, using your fingers to make sure it's fully submerged. Transfer immediately to griddle. An optional step is to sprinkle the freshly-dipped sides with a little almond meal for added texture.
Step 3- Cook for 3-4 minutes on each side or until evenly golden brown. Flip carefully using a sturdy spatula as the banana mixture can be a bit sticky if you're not gentle.
Step 4- Serve immediately with your favourite toppings! A bit of maple syrup, some macadamia butter and some yummy strawberries or coconut yoghurt are just a couple of my favourite treats.
