Chantelle's Chocolate Crunch Slice (Raw, Vegan)
This mind-blowing raw chocolate crunch slice was made and photographed by my super talented friend Chantelle and it's dairy free and refined sugar free! 1/2 cup raw organic almonds, coarsely chopped
1/2 cup raw organic hazelnuts, coarsely chopped
2/3 cup organic medjool dates, pitted and roughly chopped
2/3 cup organic cranberries
250 grams organic raw dark chocolate (Chantelle used Loving Earth brand)
2 tablespoons organic rice malt syrup
The Bondi Baker Method:
Step 1- Combine the chopped fruit and nuts in a bowl. Remove and set aside 2/3 of the mixture.
Step 2- Melt the chocolate in a glass bowl over simmering water on a low heat and stir until smooth.
Step 3- Remove the glass bowl from the heat. Add the fruit and nut mixture to the bowl and gently fold the melted chocolate into the mixture. Evenly spread mixture onto prepared tray with non-stick baking paper to approximately 1cm thickness.
Step 4- Sprinkle with 2/3 reserved fruit and nut mixture and press down gently. Place the tray in the refrigerator and chill for 2 hours or until firm. Cut into small, rectangular slices and serve, or store in an airtight container in the refrigerator for up to two weeks. *Experiment with different types of raw nuts and dried fruit to suit your preferences.
