Double Decker Superfood Slice (Raw, Vegan)
Mind-blowing peanut butter, coconut and cacao slice that's dairy free, gluten free, and refined sugar free! And if that wasn't awesome enough, this slice will keep in the fridge for up to four days, so you can enjoy at home or take to work! BB xxx
1 cup almonds
10 Medjool dates
1/4 cup maple syrup
1 cup coconut
2 cups peanut butter
3 tablespoon coconut cream (possibly more depending on texture)
3 tablespoon coconut oil
2 tablespoon cacao
The Bondi Baker Method
Step 1- Grease a loaf tin with coconut oil.
Step 2- Place almonds, dates, maple syrup and coconut in the food processor and pulse until smooth. The consistency must be sticky so if it is too dry add some coconut cream. Pat the mixture down in the pan and then place in the freezer for an hour.
Step 3- Blitz the peanut butter, coconut cream, coconut oil and cacao and add a bit of coconut if the mixture is too runny for your taste. Pat down on top of the bottom layer and place in the freezer for a least an hour. Drizzle with some melted organic chocolate if you like or enjoy on it's own!
