Vegan & Gluten Free Citrus Muffins
Naturally sweet and irresistably luscious, these dairy free, gluten free healthy muffins are a heaven-sent wholesome treat! Serve with some fresh fruit or yummy macadamia butter. BB xxxx
2 cups all purpose gluten free flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon himalayan sea salt
1/2 cup coconut sugar
3/4 teaspoon xanthan gum
1/2 cup olive oil
1 teaspoon fresh vanilla bean
1 teaspoon cinnamon
3/4 cup almond milk
1 cup applesauce unsweetened
Half of a very ripe banana
2 tablespoons of freshly squeezed orange juice
1 teaspoon orange rind
1/2 cup poppy seeds
The Bondi Baker Method
Step 1- Preheat the oven to 150 degrees. In one bowl, whisk together all dry ingredients and then set aside before mixing together all wet ingredients separately (except the almond milk).
Step 2- Gradually add the dry ingredients to the wet and alternate with the almond milk. Fold in the poppy seeds (add more than the 1/2 cup if you like).
Step 3- Place batter into 12 muffin tins greased with organic coconut oil. Bake about 20 minutes or until browned and a knife comes out clean. Yum!
