Easy Energy Slice
This is a super simple and healthy snack which is low on sugar and fun to make! You can get creative and use ingredients based on what you have in your kitchen and I like to serve them with a fresh juice. BB xxxx
1 cup coconut
1/2 cup raisins
1 cup muesli
2 tablespoons of peanut butter or almond butter
2 tablespoons coconut oil
1/2 cup fresh dates ( you can use these to replace the maple syrup)
Gluten free arrowroot biscuits (optional) for some texture
2 tablespoons cacao (optional)
The Bondi Baker Method
Step 1- Throw all the ingredients into a food processor until smooth. You can shorten the length of time if you like some extra crunch!
Step 2- Place into a pan. I like to make this slice thick and dense so use a smaller size. Sprinkle some coconut on top and place in the fridge for at least an hour to firm.
Serve with a nutrient packed green juice. Just place some kale, apple, celery, and coconut milk into the blender and you are ready to go!
