Super Easy Home Baked Summer Rolls
Meet my brand new friend, the Super Easy Summer Roll! Yep, that's right, this roll is home baked, gluten free and all things healthy. Fill it with fresh tomatoes, crispy lettuce, the sweetest of beetroot and blow-your-mind mozzarella cheese, or have a play with fillings of your own. Even though my first try at baking gluten free bread admittedly looked a little bit like prison food, the recipe below ended up being a winner. So, get your baking on, eat these straight out of the oven, and enjoy! BB xxxx
1 cup warm water
1/3 cup coconut oil, melted
2 tablespoons dry yeast
1/4 cup coconut sugar
3 tablespoons water
1 tablespoon flaxseed
1 1/2 teaspoon salt
3 cups spelt flour
The Bondi Baker Method
Step 1- Preheat the oven to 170 degrees and grease a pan with coconut oil.
Step 2- Mix the flaxseed with the water and let sit for 15 minutes. It should absorb the water resulting in a thick mixture.
Step 3- Combine water, coconut sugar, yeast and coconut oil. Mix and allow to rest for 15 minutes.
Step 4- Then add in the flour and the salt. Knead until you get to a smooth, dough like consistency. If it is too sticky you can add a couple of tablespoons extra flour.
Step 5- Separate into 12 rolls and place into the pan and let rest for 10 minutes.
Step 6- Bake for 15 minutes or until golden brown.
