Healthiest Banana and Blueberry Muffins
Meet the healthiest muffin in the universe! Full of beautiful banana and scrumptious blueberries, these delicious pieces of nutrient packed heaven are the perfect snack to keep you full of natural energy. Filled with antioxidants and potassium, you can serve with some fresh strawberries, melt-in-your-mouth butter or sprinkle with a little bit of organic icing sugar if you are feeling sweet. BB xxx
3 large bananas mashed
3/4 cup organic sugar
1 egg, slightly beaten
1/3 cup coconut oil (or melted butter)
1 cup blueberries
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cup gluten free flour
The Bondi Baker Method
Step 1- Turn oven to 150 degrees (fan forced), and mash bananas in a mixing bowl. Add sugar and egg.
Step 2- Combine sifted dry ingredients and gently stir into the banana mixture.
Step 3- Fold in the blueberries and then pour into muffin tins. I grease with coconut oil all the way to the top, so the muffins don't stick.
Step 4- Bake for 25 minutes and then leave to stand before serving with your favourite side of butter, fruit or maple syrup. Oh, and enjoy!
