Yes Yes Yes! Come and do the pancake! One day recently when I was scrolling through some recipes, I became a little bit obsessed with making a nutritious version of this awesome classic. So, after about 25 hours, I found this almond meal version which is pretty damn fine and it is filled with beautiful blueberries and antioxidants. Try serving these with yummy thick organic yoghurt, fresh strawberries or some scrumptious maple syrup. Yum!!!! BB xxxx
1 cup almond meal
1/2 teaspoon gluten free baking powder
1 teaspoon ground cinnamon
2 ripe bananas, smashed
2 free range eggs
1/2 cup blueberries
The Bondi Baker Method
Step 1- Combine mashed banana and eggs and then add almond meal, baking powder and cinnamon. Fold in blueberries if using and leave for five minutes.
Step 2- Heat a pan over a low heat and add a little organic butter or coconut oil. Spoon pancake batter into rounds onto the pan and flatten slightly with the back of your spoon. Cook over a very low heat. Take your time and then flip over and finish cooking.
Serve and enjoy alone or with some beautiful maple syrup and organic yoghurt.
