Bondi Baker Tricks & Tips
BAKE-ASTROPHE! So this is what happens when you wake up in the middle of the night, start hallucinating that you are Martha Stewart, and then realise (one coconut muffin explosion later) that you are not. And all this in the name of finding the perfect gluten-free lemon & coconut muffin! My mistake? To replace one cup of wheat flour for one cup of gluten free, which resulted in a texture that had the consistency of a 350 kilo brick. Lesson learned, so my next attempt will be to reduce the quantity of gluten-free flour, add an extra egg and make sure the coconut oil is fully melted before adding to the flour mixture! Gluten-free cooking should actually have a better texture than it's kindred wheat sister, so I have included below some tips which I found on wikipedia and glutenfreegoddess. Happy baking! BB xxxx
The magic of measurement
Yes, baking is a science and sticking to the right measurements can be crucial! That said, gluten-free does allow for a bit of experimentation so it's perfectly natural to make a few mistakes and develop your own formula for success.
You can replace 1 cup of wheat flour with:
1 cup of corn flour
1 1/8 cup of non-contaminated oat flour
5/8 cup of potato starch
7/8 cup of rice flour
1/2 cup of tapioca flour with 2/3 cup of brown rice flour
1/2 cup of rice flour with 1/4 cup tapioca starch and 1/4 cup cornstarch or potato starch
Don't be disheartened if you get it wrong the first couple of times as that is part of the fun!
Have fun and play
There is a great gluten free flour mix recipe at glutenfreegoddess.com which is based on combining 1 cup of sorghum flour, 1 cup potato starch, 1/2 cup almond meal and 1 teaspoon xanthan gum. So get creative, have a bit of a play, and mix in small quantites one bit at a time.
Rustle up some research
As a beginner, I have fun, try a bit of an experiment and then inadvertantly revert back to the mantra of Bake, Watch & Learn! There are hundreds of awesome websites with amazing hints and tricks, and they can all be found with the quick hit of google.
