Super Nutritious Cupcakes
It's the healthiest cupcake in the universe! 1/2 cup coconut oil
1 cup organic sugar
1 cup gluten free flour
1 teaspoon gluten free baking powder
2 tablespoons organic milk
1 teaspoon gluten free vanilla extract
2 cups organic icing sugar
1 cup fresh strawberries
2 dessert spoons organic butter
The Bondi Baker Method
Step 1- Preheat the oven to 175 degrees
Step 2- In a bowl, add flour, baking powder, sugar, milk and eggs and mix. This will take about 3 minutes, so be patient until it's smooth and creamy. Stir in the coconut oil and fold in the strawberries.
Step 3- Smooth coconut oil into the cupcake tins to line and then spoon the mixture in. Bake for about 20 minutes.
Step 4- While the cupcakes cool, make the strawberry icing. Place all ingredients into a bowl and beat until smooth.
Step 5- Generously top the cupcakes and garnish with fresh strawberries. Delicious!
