Beautiful Banana Bread
Let's go bananas! There is something so healthy and comforting about freshly baked banana bread, straight out of the oven. This delicious gluten free version is filled with nutritious goodness including delightful amounts of coconut and a touch of cinnamon. Serve with lashings of soft melted butter or some beautiful ricotta. BB xxxx
1 cup coconut milk
1/4 cup coconut oil
2 cup gluten free flour
2 teaspoons gluten free baking powder
1 teaspoon vanilla extract
1 cup walnuts, chopped
1 cup desiccated coconut
2 cups mashed banana
2 eggs, lightly beaten
1 cup brown sugar
1 teaspoon cinnamon
The Bondi Baker Method.
Step 1- Preheat oven to 180 degrees. Grease a loaf tin and line with baking paper or lightly coat with butter.
Step 2- In a large bowl, combine banana, oil, eggs and coconut milk.
Step 3- In a separate bowl, mix dry ingredients together - you can also add a pinch of salt if you're feeling a bit adventurous.
Step 4- Whisk wet ingredients into dry ingredients and combine well.
Step 5- Transfer to your pre-prepared loaf tin and bake in preheated oven for 60 minutes. The baking time will vary, so check it after an hour by inserting a skewer into the centre of the bread. If it comes out clean your bread is ready.
Step 6- Allow your bread to cool for 10 minutes before removing from tin and serve with scrumptious melted butter or ricotta.
