Healthy Strawberry & Coconut Muffins
If you're like me you will love everything coconut! It smells like heaven, can be used for silky smooth skin, a luscious hair treatment and best of all it tastes like perfection thus making coconut the perfect ingredient for delicious health conscious baking. This recipe also includes strawberries for a nice shot of Vitamin C and you can find it at a coconut friendly website called free coconut.com. Oh, and go ahead and add some organic white chocolate if you like. BB xxxx
1/2 cup coconut flour
1/2 teaspoon Himalayan salt
1/2 teaspoon baking soda
1/3 cup raw honey
1/3 cup coconut oil
1 teaspoon vanilla extract
1 cup strawberries
The Bondi Baker Method.
Step 1- Heat oven to 180 degrees.
Step 2- In a small bowl, combine the coconut flour, salt and baking powder.
Step 3- In a large bowl, mix the eggs, honey, coconut oil and vanilla until we'll blended. Mix in dry ingredients, blending with a hand mixer or by hand. Gently fold in strawberries sliced to your preference.
Step 4- Place batter in a paper lined muffin tin (I love the largest size possible) and pour until about 3/4 full.
Step 5- Bake in a preheated oven for about 25 minutes. Take them out and let them cool.Serve this with some melted butter or enjoy on their own!
