This is one for when you feel like a bit of indulgence and it's the perfect way to enjoy morning or afternoon tea. The decoration part of the process is quite intense so I always make it into a fun afternoon session with a friend and some music! This recipe has been tweaked from one I found at taste.com.au and served with pure cream or some extra jam. BB xxxx
Melted butter to grease
1 1/4 cup gluten free plain flour
2 1/2 teaspoon gluten free baking powder
3 eggs, room temperature
3/4 cup caster sugar
1/2 cup milk
2 teaspoon vanilla essence
2 cups pure icing sugar
1/3 cup cocoa powder
2 cups desiccated coconut
Warm strawberry jam
The Bondi Baker Method.
Step 1- Preheat oven to 180 degrees and brush two 20 cm pans with melted butter. Line the bases with non stick baking paper.
Step 2- Sift the plain flour and baking powder into a bowl. Use an electric beater to beat the eggs, vanilla, milk and sugar in a large bowl for ten minutes or until thick, pale and creamy.
Step 3 - Sift half the flour mixture over the egg mixture. Use a large metal spoon to fold until just combined. Repeat with remaining flour mixture.
Step 4- Divide mixture among the pre-prepped pans and smooth the surface.
Step 5 - Bake for just under fifteen minutes or until golden and the cake springs back slightly when tapped. Set aside in pans for 5 minutes to cool slightly before turning onto wire racks to cool completely. Now you are ready to make the yummy icing....
Step 6- Sift the icing sugar and cocoa powder into a bowl. Stir into the water and pour into a shallow dish. Try not to eat too much out of the bowl as you need it for the lamingtons!
Step 7- Spread the coconut over a large tray. Dip the base and side of 1 cake into the icing, allowing any excess to drip off. Place the cake, (icing side down) onto the coconut and turn onto the base and side. Spread with jam.
Step 8 - Dip the top and side of the remaining cake in the icing, then the coconut and top the jam covered cake with the remaining cake, coconut side up. Yum! Treat yourself and enjoy!!!!
