Crunchy Chocolate & Coconut Balls
I love these. They are a healthy way to indulge yourself and perfect if you are looking for a natural energy burst or sassy snack. I love finding different recipes and then experiment by throwing in a couple of new ingredients! The inspirational Sarah Wilson does some amazing versions at I Quit Sugar or you can have fun making up your own. Just try to stop at one..... BB xxxx
2 cups almond meal
2 large tablespoons raw cacao
1 1/2 cup pitted dates
1 1/2 cups desiccated coconut
2 teaspoons vanilla extract
3 tablespoons coconut oil
1/2 cup maple syrup
The Bondi Baker Way.
Step 1- Put all the ingredients in a food processor or in a plastic bag and hit hard with a rolling pin! Note: The food processor way, is the more user-friendly option.
Step 2- Once it's a nice sticky mixture transfer to a big bowl and add the coconut oil. Mix well.
Step 3- Put the leftover desiccated coconut on a plate and roll the mixture into generous sized balls. Cover in coconut.
Step 4- If you are an apricot fan you can just swap with the cacao and follow the steps above. Then place in the fridge to firm before eating!
