Delicious Vegan Apple & Banana Loaf
Yum!!!! This a clean eating alternative for breakfast or lunch and it is completely delicious and full of wholesome nutrients like vitamin C, magnesium and potassium. I adapted this from Teresa Cutter's The Healthy Chef website, and you can eat on it's own or drizzle with some honey and berries. Note the vegan option is a little bit denser than if you use eggs. 3 cups grated red apple
1 cup mashed banana
2 teaspoons baking power
1/4 teaspoon sea salt
60 ml almond milk and 2 tablespoon chia seeds for vegan option, or 3 organic free range eggs
1/4 cup olive oil
1 teaspoon vanilla bean paste or extract
2 cups wholemeal spelt flour
The Bondi Baker Method
Step 1- Preheat your oven to 150 degrees fan forced.
Step 2- Combine apple, banana, baking powder, salt, almond milk, chia seeds, oil, cinnamon and vanilla into a bowl and mix well. If you are not baking the vegan version you can replace the almond milk and chia seeds with eggs.
Step 3- Add the wholemeal spelt flour and mix through lightly. It’s important not to over-mix so just until it’s combined.
Step 4- Line a loaf tin with baking paper at the base and the sides.
Spoon mixture into your loaf tin.
Step 5- Bake for 1 hour or until skewer inserted comes out clean. Times may vary so check after 45 minutes and cover with foil if necessary. Remove from the tin and allow to cool for 1 hour before removing from the tin.
Enjoy alone or topped with your choice of honey, ricotta, berries or macadamia butter.
