Organic Cacao & Coconut Party Cake
Yum!!!!! This luscious gluten free organic cacao and coconut cake is a huge thank you to all of you who have been kind enough to support my baking over the last four months! It has been an amazing year and I am truly thankful and wish you all a safe and healthy New Year. This super easy chocolate cake is adapted from The Healthy Chef website and coconut flour and oil are used to replace traditional wheat flour and butter. 1/4 cup quality cacao
1/4 cup coconut flour
1 1/2 teaspoon gluten free baking powder
1/4 cup organic maple syrup
1 teaspoon vanilla extract or 1/2 teaspoon vanilla bean paste
1/4 cup melted coconut oil or butter
Step 1- Preheat oven to 160 degrees.
Step 2- Combine the cacao, coconut flour, baking powder and you can add a teaspoon of spice here if you like. Add the eggs, honey, vanilla and oil. Mix well until smooth and combined.
Step 3- Spoon into a 20 cm baking tin lined with baking paper – the smaller the tin the higher the cake and I actually baked two cakes as a double layer for the photograph.
Step 4- Bake the cake for 40 minutes or until cooked through. This is delicious on it's own, or I threw some organic cacao, icing sugar and cream cheese into a bowl and then topped with fresh fruit!
