Sugar-Free, Gluten-Free Healthy Christmas Treats
Are you looking for a delicious sugar-free, gluten-free Christmas treat that's full of fruity goodness!!! Me too!!!! These mind-blowing bites of Christmas heaven are full of healthy nutrients from the banana, dried fruit, almond flour and olive oil, and the subtle sweetness comes naturally from honey. They are an awesome way to balance Christmas fun with staying healthy, and you can sprinkle some organic coconut on top or lavish with some yoghurt and cheese icing and preservative free sprinkles! 3 large free range eggs, separate
2 1/2 cups almond flour
1/2 teaspoon baking soda
1 cup of your favourite dried fruit including dates, sultanas, raisins, dried apricots etc.
4 tablespoons honey
1/4 cup olive oil
1 teaspoon pure vanilla extract
2 mashed banana
1 packet cream cheese and a dash of milk or yoghurt if you desire icing.
The Bondi Baker Method
Step 1- Preheat oven to 150 degrees fan-forced and grease cupcake tin with organic butter.
Step 2- Whip the egg whites to stiff peaks.
Step 3- In another bowl, combine the egg yolks, almond flour, baking soda, honey, oiland vanilla. Beat with a mixer until fully combined and then fold in the banana and dried fruit.
Step 4- Fold in the egg whites until the mixture is full blended.
Step 5- Pour the batter into tins and bake for 30 minutes. Allow to cool on a rack before icing if you desire. I just beat some cream cheese with a dash of milk and organic food colouring and lavished on top of each cake. Super easy, and delicious!
