Sassy & Sugar Free Sultana & Apple Muffins
Hand's up if you're ready for the healthiest, sassiest muffin on Planet Organic! Me too!!!! Cross my heart, this a sugar free, wheat free bliss-fest of tantalising taste and fun, and it's packed full of protein from the almond milk and eggs, and vitamin C from the apples. Oh, and if that wasn't enough to make you happy, it is also super easy to make! Serve with some fresh fruit, melted organic butter and lot's and lot's of heartfelt kisses xxxxxx
1/4 cup melted coconut oil
1/2 cup almond / rice / coconut milk
1/2 tsp vanilla
1/4 cup honey
1/2 cup coconut flour
1/2 teaspoon baking powder
3/4 cup sultanas
1 apple sliced thinly
The Bondi Baker Method
Step 1- Preheat oven to 170 degrees and grease muffin pan with coconut oil.
Step 2- Whisk eggs, then mix in milk, melted coconut oil, honey, and vanilla.
Step 3- Sift in the coconut flour and baking powder.
Step 4- Stir in the sultanas and divide the mixture evenly between cases.
Step 5- Bake for 30 minutes (or until cooked through the middle) and leave to cool for ten minutes before eating!!!
