Summer Kisses Organic Orange Cake

Organic butter, to grease pan
2 cups gluten free self-raising flour
1 cup gluten free plain flour
2 cups sugar
300 grams organic butter, cubed, at room temperature
1 1/4 cups organic milk
Juice and zest of 2 oranges
5 free range eggs, at room temperature
3 teaspoons vanilla essence
1 packet cream cheese
2 cups organic icing sugar
Juice and zest of 1 orange
The Bondi Baker Method
Step 1- Preheat oven to 160° degrees. Position a rack on the second lowest shelf of the oven. Brush a round 20cm cake pan with the butter to lightly grease.
Step 2- Place the self-raising flour, plain flour, sugar, butter, milk, eggs, orange and vanilla essence in a large mixing bowl. Use an electric beater to beat on low speed for 30 seconds or until just combined. Increase the speed to high and beat for 1-2 minutes or until the mixture is thick and all the butter is incorporated. Spoon the mixture into the prepared pan and smooth the surface with the back of a spoon.
Step 3- Bake in preheated oven for 1 1/2 hours or until a skewer inserted into the centre of the cake comes out clean. Remove from oven and set aside for 10 minutes. Turn onto a wire rack for 2 hours or until completely cool.
Step 4- Meanwhile, beat together the cream cheese, icing sugar and juice and zest of one orange and place in the fridge. Once the cake is cool, top lavishly with this delicious creamy mixture.
