Healthy Banana & Coconut Slice and Inspiration To Eat Clean
This is such a cool book!!! When I got sick at the end of last year, one of the things that inspired me to take responsibility for my health was Alejandro Junger's book called Clean, which provides awesome, practical tools that can be incorporated into busy schedules and rejuvenate our precious bodies. If you've read my blog, you'll see I spent way too many years living on diet coke (yep, that's coconut water I'm holding in the picture!) and refined sugar, so even though I love baking, I always try and balance it out by using healthy ingredients without getting caught up in a cycle of deprivation. 1 cup medjooli dates
1 cup coconut
1 cup oats
2 tablespoons oil
2 tablespoons maple syrup
8 gluten free arrowroot biscuits
Juice & zest of 1 lemon
The Bondi Baker Method
Step 1- To make the base, place the oats, dates, biscuits and 1 tablespoon of maple syrup in the food processor until smooth. Then pour into a tin and pat firmly. Place in the fridge.
Step 2- Place coconut, banana, lemon, oil, and 1 tablespoon of maple syrup in the food processor until smooth. You don't want this too runny, so check the consistency and maybe add half the banana rather than a whole. Place on top of the base and in the refrigerator for at least an hour before eating!!!!
