Yummiest, Healthiest Sugar Free Pavlova

Can I introduce you to the healthiest, yummiest pavlova you will ever meet?! Sweetened naturally with delicious stevia, this luscious summertime dessert is topped with fresh, healthy fruit and organic yoghurt, and the light, airy meringue is packed full of protein filled egg whites. Trust me..... just one beautiful bite and you will be transported to all your favourite memories of sun-filled summers and perfect picnics by the beach. Oh, and when cooking with stevia you need to replace the bulk, so I used two extra egg whites or you can use apple sauce. BB xxxx

Shopping List
8 free range egg whites
1 teaspoon stevia (or 1 cup caster sugar if you don't want sugar free)
1 cup organic cream
1/2 cup organic yoghurt
Vanilla pod
Fresh fruit to top pavlova

The Bondi Baker Method
Step 1-  Preheat your oven to 150 degrees, then whisk egg whites until soft peaks form. Add in stevia (or sugar) and whisk on high for at least ten minutes or until the mixture is smooth and glossy. 
Step 2- Pour the mixture into a pan lined with baking paper. The mixture should be patted into a 20 cm circle. Bake for at least 50 minutes or until golden brown. Allow to cool in the oven, otherwise the pavlova may collapse.
Step 3- In a bowl, beat the cream until thick and then add in the seeds of the vanilla pod and the yoghurt.  Add a pinch of stevia if you would like it sweeter. The mixture should be thick and creamy. Place in the fridge for about half an hour.
Step 4- Once cooled, top the pavlova with the creamy yoghurt, and then top with your favourite fruit. Delicious!!!!
