Luscious Gluten Free Red Velvet Cake
Meet the most delicious, luscious, gluten-free home-made treat in the universe!!! I made this for my beautiful friend Brigitte and it is a heaven of heart-stopping gluten free indulgence and a fantastic alternative to the traditional Christmas cake. Every ingredient including the rich, gorgeous colouring is all natural and preservative free and there is lot's of calcium, protein and vitamin C. 3/4 cup coconut oil
1 cup sugar (or 15 grams stevia if you want sugar free but remember to make up the bulk with extra egg whites or apple sauce)
2 free range eggs
4 tablespoon cacao
1 tablespoon organic red food colouring
1 teaspoon vanilla extract
2 cups gluten free flour
1 teaspoon vinegar
1 cup buttermilk
1 1/2 teaspoon guar gum
1 teaspoon baking soda
The Bondi Baker Method
Step 1- Preheat your oven to 170 degrees and line 2 x 9 inch cake tin with baking paper or grease with coconut oil.
Step 2- In a large bowl, mix together the eggs, sugar and oil until creamy and smooth.
Step 3- In a separate bowl mix the cacao and food coloring. Add a drop of buttermilk so it forms a paste.
Step 4- Now add the colouring paste, vinegar and guar gum to the egg mixture and combine gently. In a separate bowl sift the flour and baking soda.
Step 5- Then, mix the flour mixture and milk alternatively into the egg mixture, ending with the milk. Keep stirring until you have smooth, creamy consistency.
Step 6- Pour into the prepared pans and bake for about 30 minutes. Allow to cool.
Step 7- Frost as desired. I like to use organic cream, sugar and the organic colouring to create a dreamy frosting. Yum!!!!!!
