Ten Minute, Tempting & Tasty Organic Cookies
May the force be with you! These melt-in-your-mouth gluten free cookies only take ten minutes to make and are packed full of delicious organic ingredients! You'll get a precious protein kick from the almond flour and eggs, and som calcium too. Serve with some beautiful fresh fruit and lots and lots of kisses. BB xxxxx
8 ounces organic chocolate, 4 ounces melted and 4 ounces coarsely chopped
1 1/2 cups almond flour
1/2 cup organic cacao
1/2 teaspoon baking soda
1/2 teaspoon sea salt
8 tablespoons butter, cubed
1 cup coconut sugar
2 large eggs
1 teaspoon pure vanilla extract
The Bondi Baker Method
Step 1- Preheat oven to 170 degrees.
Step 2- Melt half of the chocolate carefully over hot water (delicious!) and combine the almond flour, cocoa, baking soda, salt and sugar in a food processor.
Step 3- Add the cubed butter and process until the mixture resembles coarse cornmeal. Add the eggs, vanilla and melted chocolate and process until it becomes smooth. Then fold in the beautiful chopped chocolate.
Step 4- Drop one heaped tablespoon of the mixture a few inches apart onto two baking sheets. Bake until just set, about 8 to 10 minutes, rotating halfway through. (Do not bake the cookies to a crisp; they will be soft when you take them out of the oven, but firm up as they cool, so be careful not to over bake.)
Step 5- Transfer cookies to a wire rack to cool completely.
