Crazy Healthy Coconut Cake
Hands up if you love healthy coconut cake!! Me too!!! And the most awesome thing about this version is that it is super wholesome, wheat free and full of beautiful nutrients like protein and calcium from the almond flour, almond milk, yoghurt and eggs. And....if you want to be a little bit virtuous, just enter into an icing free zone and sprinkle with some coconut. BB xxxxx
2¾ cup almond flour
4 tablespoons coconut flour
¼ teaspoon cream of tartar
2 cups organic or confectioners sugar, sifted (it must be fine)
5 large free range eggs, room temperature
12 tablespoons organic butter
1 cup greek yogurt
1½ teaspoon pure almond extract
1½ teaspoon pure vanilla extract
1 cup coconut almond milk
4 ounces sweetened shredded coconut
1 and a half packets of cream cheese, room temperature
2 sticks unsalted butter, room temperature
¾ teaspoon pure vanilla extract
¼ teaspoon pure almond extract
3½ cups of confectioners or organic icing sugar, sifted
The Bondi Baker Method
Step 1- Preheat oven to 170 degrees fan forced and grease two 9" round cake pans with coconut oil.
Step 2- In a bowl, beat butter on high until light and creamy, which usually takes about 3-5 minutes. Lower the speed of mixer and add eggs until mixed. Slowly add sugar until blended.
Step 3- In another bowl combine the sifted flours and cream of tartar. Mix in the yogurt and milk (add in thirds) until blended. Add the extracts.
Step 5- Add coconut to the mix and stir. Then combine the two mixtures together before dividing between two prepared pans.
Step 6- Tap down to settle and bake for about 45 minutes.
Step 7- Cool on a baking rack for 30 minutes, then turn the cakes out onto a baking rack to finish cooling.
Step 1- Add cream cheese and butter to electric mixing bowl and beat on high until smooth and creamy. Add extracts to blend.
Step 2- Then, lower the mixing speed and slowly add sugar.
Step 3-To assemble, place one layer on a cake plate, top side down, and spread the frosting over the top. Place the second cake layer on top, top side up, and frost the top and sides. To decorate the cake, sprinkle the top with coconut. Yum!!!!
