Nutritious Kangaroo Cookies
Say hi to the super friendly Kangaroo cookie! It's the gluten free, sugar free sister to the Aussie Anzac, full of healthy nutrients like iron, vitamin D and protein from the oats, sultana and chia seeds. Completely delicious and believe me..... you won't be able to stop at one. BB xxxxx
1 cup gluten free self raising flour
1 cup oats
1 cup gluten free toasted muesli
1 cup sultanas
3 tablespoons honey or maple syrup
125 grams organic butter, melted
1 organic egg, lightly beaten
1 tablespoon chia seeds
The Bondi Baker Method
Step 1- Preheat oven to 150 degrees fan forced.
Step 2- Sift dry ingredients in a bowl and then in a separate bowl combine the butter, maple syrup and egg. Add to the dry ingredients by folding in gently.
Step 3- Drop 2 tablespoons of mixture (leave plenty of space inbetween) onto a greased tray. Pat down gently and bake for about ten minutes. Yum!!!!
