Beautiful Berry Muffins
This is a super nutritious and awesome recipe adapted from the brilliant Healthy Chef website (www.healthychef.com). Made with wholesome almond meal to replace wheat flour and filled with fresh raspberries and blueberries, these beautiful muffins are high in protein and filled with antioxidants from the blueberries. Top and serve with some extra fresh berries or some ravishing fresh ricotta. BB xxxx
3 cups almond meal or gluten free flour
2 teaspoons gluten free baking powder
4 organic eggs, lightly beaten
1/2 cup of coconut oil
2 tablespoons of maple syrup
1 cup mashed banana
1 cup blueberries
1 cup raspberries
The Bondi Baker Method
Step 1- Preheat the oven to 150 degrees fan forced.
Step 2- Sift the almond meal and baking powder and then gently fold in the lightly beaten eggs, oil and honey to form a smooth batter.
Step 3- Fold in the banana, raspberries and blueberries.
Step 4- Spoon into large muffin tins greased with coconut oil and bake for about 30 minutes before getting ready to eat. Quick, healthy and delicious!!!!
