Quick & Healthy Banana Slice
This beautiful banana slice is one of the yummiest snacks you will ever eat! Easy to make and completely wheat free, it is full of nutritious ingredients that will keep you feeling energised. 1 cup organic yoghurt
1 1/2 cup mashed banana
1/2 vanilla pod, split lengthways and seeds scraped
2 tablespoons honey
3/4 cup gluten-free flour
1 teaspoon gluten free baking powder
1 cup organic brown sugar
Pinch of salt
The Bondi Baker Method
Step 1- Preheat the oven to 170 degrees and line a 23cm square tin with baking parchment.
Step 2- Sift together the flour, baking powder and sea salt into a bowl.
Step 3- Then, combine the yoghurt, vanilla seeds and honey. Add the light brown sugar and mix until well combined.
Step 4- Gently fold the dry ingredients into the wet ingredients, then stir in the mashed banana. The mixture should be thick and creamy.
Step 5- Pour the batter into the prepared pan and evenly spread with a spoon or spatula. Bake in the oven for 30–35 minutes, until the top is firm and a gorgeous golden brown. Remove from the oven and let the slice cool completely in the pan.
